meatloaf and mashed potatoes

the all-american meal. I actually cooked this last night specifically so I could submit my link to the national meatloaf appreciation day thingy on serious eats. I make it from time to time anyway, and I think I found a really yummy basic recipe. nothing fancy, but oh so good. I think the ginger is what does it.

steve loves this one and so do I (mmmm, leftover meatloaf sandwiches) but next time I'm going to try this one thanks to seeing it from the home cook. and speaking of the home cook, she also recommended using plugra because it made her mashed potatoes much more buttery tasting. so I bought some this past week (not expensive!) and tried it with these potatoes mixed with garlic and scallions. YUM! and thanks!

Meatloaf

Ingredients

¼ cup packed brown sugar
¼ cup ketchup
¼ cup yellow mustard
1½ pounds lean ground beef
¾ cup milk
2 eggs
1½ tsp salt
1¼ tsp ground black pepper
1 tsp garlic powder
1 small onion, chopped
¼ teaspoon ground ginger
¾ cup finely crushed saltine cracker crumbs

Directions

1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 5x9 inch loaf pan.

2. In a small bowl combine brown sugar, ketchup and mustard for the glaze. Set aside.

3. In a mixing bowl, mix all remaining ingredients and shape into a loaf.

4. Put loaf in pan and cover with glaze on the top and sides.

5. Bake in preheated oven for 1 hour or until juices are clear.

I LOVE that meatloaf recipe. Definitely our favorite.

I really wanted to enter the meatloaf event but we totally OD'd on meatloaf after the last time I made it.

Mmm...Plugra. I need to get another brick so I can use it in mashed potatoes again. Yum!

Try adding 2 teaspoons of Allspice to the glaze. It makes a big difference and everyone will go "Ummm, I wonder what that is..."
