Spicy Corn and Mushrooms with Cilantro


Spicy Corn and Mushrooms with Cilantro
adapted slightly from delish

Ingredients

5 ears fresh white or yellow corn, husks removed and kernels cut from cobs (alternatively, you can 3 cups frozen)
8 ounces crimini mushrooms, diced
2 tablespoons butter
1/2 teaspoon cayenne pepper
1/2 teaspoon smoked paprika
1/2 cup chopped cilantro
Kosher salt
Cracked black pepper

Method

In a medium, heavy-bottomed skillet, heat 1 tablespoon butter over high heat. When butter has melted and is just beginning to brown, add the mushrooms and saute until softened and browned.

Reduce heat to medium high. Add corn, the remaining 1 tablespoon of butter, cayenne pepper and smoked paprika. Stir to combine. Continue to saute until corn kernels are softened, about 5 minutes. Remove from heat. Stir in 1/2 cup cilantro. Add salt and pepper to taste.

NOTES

This is an amazing little dish. The original used half the spice mine did (surprise, surprise), so of course you can always adjust it to your taste. I also admit to being haphazard with the corn and mushroom measurements. Just create a ratio that seems right to you.

Serve it with the Chipotle Honey Lime Pork Tenderloin below. You can thank me later.

I agree with your commentary -- I can see how haphazard measurements would be fine. I think what surprises me the most is the cilantro... but if you say it's delicious... you haven't steered me wrong yet :)

And really, I never would have thought of this combination, but one look at Beck's photos had me sold. It's wonderful.

um yeah, i wouldn't have thought to put these together like this either.
i bet it would be tasty as a main dish as well. maybe with some diced chicken, over rice. hmmm... i love get fun ideas from you <3

I LOVE recipes where the measurements don't have to be precise. I don't roll that way! Probably the main reason that I don't enjoy baking!

I'm bookmarking this now. I bet this would be good with a mushroom combo, too. Maybe Crimini's, Baby Portobellas, & Shitakes? What do you think?

I just love it when you can adapt a recipe to your own taste! I also love the idea of adding chicken!

Honestly, Edwin, I was a little curious when you used the word 'salsa' down there. I bet you'd really like this interesting dish though.

LS - Becks said that the restaurant dish that she got this idea from used shitakes and green onion, so I think anything would work. And I love the idea of making this a single meal and adding chicken too. Nice going D!

I guess it does seem like an odd pairing, but I love corn and mushrooms, so bring it on. And p.s. - the pork looks amazing, with that sauce glistening. I can taste it.

I saw that corn on the plate next to the pork and I knew right away which recipe it was! I still haven't had a chance to try it but I am looking forward to it. The pork loin looks incredible.

Great for when the corn season comes. I think it's a great combination.

Some bacon would be very nice in this too.

Made this tonight, I'm with Short (dis)Order - corn season can't get here quickly enough. The flavors were right on, but I'll use frozen corn next time. The fresh corn was a starchy, chewy disappointment.

Just another reason to look forward to August...

And yes, my ratio of mushroom-to-corn was higher than yours.

I've actually only made this with frozen because I haven't made it in corn season yet. But I will!
