Yukon Golds with Shallot Butter

Yukon Golds with Shallot Butter
from Food & Wine


2 1/4 pounds small Yukon Gold potatoes, scrubbed but not peeled
1 teaspoon yellow mustard seeds
4 tablespoons unsalted butter, softened
1 tablespoon minced parsley
1 medium shallot, minced
2 teaspoons fresh lemon juice
Salt and freshly ground pepper


In a saucepan, boil the potatoes in water to cover until tender, about 15 minutes.

Meanwhile, in a small skillet, toast the mustard seeds over moderate heat until they pop, about 3 minutes. In a small bowl, mix the butter with the parsley, shallot, lemon juice and mustard seeds. Season generously with salt and pepper.

Drain and halve the potatoes lengthwise. In a large dish, toss the potatoes with the shallot butter and serve.


I did them twice this week and plan to do the same next week. There's not much to say other than that they're freaking fantastic. End of story.

Potatoes - Is there anything they can't do? And I always want to do more with mustard seeds. I think they're underrated.

I have a similar recipe from Williams Sonoma. I used to make it frequently, pre-kids. But my weird spawn don't like potatoes, so I don't make it much anymore. You've reminded me how much I miss this dish. Who doesn't like potatoes?!

Lisa, me too! If the recipe was called "Yukon golds with herb/lemon/____ butter." I may have skipped it, but "shallot butter" was like a siren song.

Amy, I have to laugh because I used to not like potatoes. I'll tell you why on FB. Haley and Trevor will probably change their minds as they get older, though, wouldn't you think?
